Tip For Preparing The Perfect Lemon Curd!

Here is a simple recipe to prepare my zesty Lemon Curd! So rich and glossy, you can spread it on almost everything if you are a lemon lover (like me): toasts, cakes, muffins, tarts, ice cream, waffles, crepes, pancakes, yogurt…or just grab a spoon!
Ingredients:
  • 1 cup of granulated sugar
  • 3 eggs
  • 1 cup freshly squeezed lemon juice ( approximately 5 lemons)
  • zest of 5 lemons
  • 1/2 cup of unsalted butter, melted
  • 1 teaspoon of lemon extract
Step-by-step instructions:
  • Use a microwave-safe bowl
  • Whisk the sugar and eggs, this is what we call “blanchir” the eggs
  • Add the lemon juice, lemon zest and the melted butter. Whisk all ingredients together
  • Use your microwave to cook the lemon curd for 1 minute at full power, remove and stir
  • Repeat the above five times, only 1 minute in the microwave and remember to stir each time.
  • Sift the lemon curd through a fine, mesh sieve. Use a spoon or spatula to push it through
  • Transfer the lemon curd in 1 or multiple containers. Make sure you close the containers once the lemon curd has cooled down.
  • You can store the lemon curd up to 10 days in the refrigerator
