During the class, we will cook together cheese soufflé! This savory and airy French appetizer only requires eggs, milk, nutmeg, and strong grated cheese such as Gruyère. The cheese soufflé has a delicate fluffy texture and must be served immediately once risen (soufflé) and hot from the oven!

We recommend purchasing the cheese as a block and grate it yourself for more flavor. The ingredients are simple but my technique will help your cheese soufflé rise perfectly!

LIST OF INGREDIENTS:

4 tbsp of butter at room temperature • 4 tbsp of all-purpose flour • 1 tbsp of melted butter and 1 tbsp of flour • salt & pepper and freshly grated nutmeg • 6 eggs at room temperature  • 2 cups of cold milk • 2 cups of grated cheese (such as Gruyere or Cheddar) •

LIST OF COOKWARE AND ACCESSORIES:

• 1 large saucepan • 1 large round ceramic ramequin, 7.5-inch diameter or 8 small round ramequins for individual portions  (see Amazon links below) •1 spatula • 1 baking tray • 1 pastry brush
