LIST OF INGREDIENTS:
- 1 cup of pearl couscous (usually 1 packet 8oz of pearl couscous)
- 1 tbsp of dried herbs (eg: herbs of Provence)
- 3 cups of cold water
- 1 cucumber (english cucumber preferably)
- 2 cups of Cherry tomatoes
- 1 jar of Kalamata black olives
- 3 celery stalks
- 3 scallions
- 1 bunch of fresh mint leaves
- Plenty of extra virgin olive oil!
- 2 tbsp of Dijon Mustard
- Salt & pepper
- 1 lemon
- 1 pack of Feta Cheese (you can also choose 1 goat cheese log)
- Ice Cubes
- This salad needs to be refrigerated at least 2 hours before serving (overnight even better!)
