LEGEND HAS IT THAT CASSOULET WAS BORN DURING THE HUNDRED YEARS' WAR!
Learn how to cook Cassoulet with Chez François!
Cassoulet is certainly one of the most iconic stew from Southern France typically made of white beans, lard, meats, and duck confit. This traditional dish requires a level of planning to source the right ingredients and some preparation the night before. Before slow-cooking and baking the casserole for hours, all ingredients should be cooked separately. This is an exciting cooking challenge but well worth it!
Legend has it that the Cassoulet was born during The Hundred Years' War, in Castelnaudary (Aude- France) besieged by the English. The inhabitants, threatened with famine, gathered all they had to feed the soldiers of the city: beans, pork, lard, sausages, and other meats were simmered in a large bowl. The meal gave strength to the soldiers from Castelnaudary who kicked the English out of Lauragais and to the edge of the English Channel! The cassoulet recipe was born!
