Tip For Preparing The Perfect Pesto!

Would you like to try my pesto? You should! Here is my recipe, such an easy and delicious paste to create. Use it for pasta, sandwich spread, veggie dip, boiled eggs, salad dressing, chicken breast…
I chose Cilantro (coriander) but of course you can also use basil or parsley as an alternative.
Step-by-step instructions:
Mix all ingredients in a small food processor and add progressively the olive oil:
– 1 bunch of cilantro, remove thick stems, keep mainly leaves
– 1/3 cup of Parmesan Cheese
– 1/3 cup of Pine Nuts or Sunflower Seeds
– 6 large cloves of garlic (adjust the quantity if you don’t like too much garlic)chopped!
– 2 sliced Scallions (spring onions)
– 3 anchovies fillets
– 1 teaspoon of capers
– 1 teaspoon of old style grain mustard
– 2 tablespoons of lemon juice
– 1/2 teaspoon of pepper
– 1/2 teaspoon of salt
– 1/2 teaspoon of Tabasco
– 4 tablespoons of olive oil on top
Mix for 10 seconds, then add another 4 tablespoons olive oil while mixing
