Pastry:
• 300 grams all-purpose flour (2 cups) and 50 grams for extra use • 1/2 teaspoon salt • 150 grams of unsalted butter (1 cup) and 50 grams of vegetarian butter (margarine) at room temperature • 5 tablespoons of cold water
Filling:
• 1 cup of diced cooked ham OR diced cooked bacon Or sliced vegetarian sausages Or 1 pack of smoked salmon (7 oz)• 1 cup of thinly chopped onions and garlic • 1/2 cup of white wine • 5 eggs • 1 pinch of freshly grated nutmeg • 1 cup of freshly grated gruyère and some extra to sprinkle on the top of the quiche • 1 tbsp of butter • 1/2 cup of chopped fresh oregano • 1 pinch of salt and pepper • 2 cups of heavy cream • (extra for vegetarian option: 1 cup of sliced mushrooms - extra for salmon option: 1 leek or 1 bag of watercress)
• 1 Large Bowl • 1 Whisk • Baking Beans (Pie Weights) or alternatively coffee beans or dried peas such as black-eye peas (only used as weight to blind bake the crust) • Parchment Paper • 1 Tart Pan (Approx 9" Diameter) • 1 Frying Pan
