We’ll prepare a fragrant almond-flour crust and a velvety lemon filling together step-by-step. (Yes… you’ll need lots of lemons! 🍋)

LIST OF INGREDIENTS:
Crust: 1/2 cup of unsalted butter, cubed and at room temperature (125g) • 1 cup of powdered sugar (100g) • 1/2 tsp of vanilla extract • 1 pinch of Salt • 1/3 cup of almond flour (40g) • 2 cups of all-purpose flour • 1 large egg
Filling: 3 Lemon zest • 1 cup (250 ml) of freshly squeezed lemon juice (=12 small lemons or 8 large lemons) • 3/4 cup of sugar (150g) • 1 pinch of salt • 3/4 Cup of unsalted butter in cubes (170g) • 4 large eggs • 4 egg yolks
LIST OF COOKWARE AND ACCESSORIES:
• 1 manual juicer/squeezer or electric juicer • 1 Strainer • 1 medium saucepan • 1 tart dish (approximately 9 inches) • 1 box grater or flat grater • Kitchen towel • 1 Rolling pin • Parchment paper • 1 bowl • Electric hand mixer • Baking Beans (pie weights) or alternatively coffee beans or dried peas such as black-eye peas (only used as weight to blind bake the crust) • 1 rubber spatula
