During this class, we will cook together my favorite FISH PIE recipe! This decadent gratin is made of creamy white sauce and chunky pieces of fish and seafood baked together with spinach and mash. Quick and easy to make, this Fish Pie is comfort food that will satisfy the entire family, even kids love it! My recipe does not require pre-cooked fish, I prefer the fish to cook while absorbing all the flavors of the ingredients.

• 1 lb of a Fish Mix that we will cut into chunk pieces: Skinless and Boneless: Cod, Salmon and Haddock (or Flounder) • 10 Large Shrimps • Optional: 1/2 cup of small Scallops • 1 bag of Spinach Leaves • 6 to 8 Large Gold Potatoes • 4 oz of Butter • 3 Cloves of Garlic • 1 Cup of Chopped Onions/Shallots • 1 tbsp of Fresh Thyme & 1 tbsp of Chopped Parsley • 1 pinch of Freshly Grated Nutmeg • 1 Cup of Hot Milk, 1 Cup of Vegetable Stock and 3 tbsp of Heavy Cream • 2 Large Egg Yolks • 4 tbsp of all Plain Flour • 2 tbsp of White Wine or Dry Vermouth • Salt & Pepper • Half Lemon Juice • 2 Cups of Cheddar or Gruyere Finely Grated
• 1 Chopping Board • 2 Knives • 1 Stockpot or Large Saucepan • 1 Medium Saucepan • 1 Oven Gratin Dish (approximately 16 inches x 9 to 11 inches) • 1 Box Grater or Flat Grater • Kitchen Towel
