The Kale Chorizo Soup is ideal for winter days whenever you are looking for something healthy and comforting. The chorizo slices are lightly pan-fried which gives an amazing smoky taste to the soup. This dish can be served as a light course for dinner or as an appetizer.
Vegetarians can substitute chorizo with Soyrizo or vegan-sausage.

• 2 lbs Gold Potatoes, peeled • 1 lb Sausage (Chorizo, Linguiça or kielbasa), thinly sliced - Replace with Soyrizo or Vegan Sausage as a vegetarian option • 1 Bunch of Flat Kale Leaves (or Collard Greens) • 3 Cloves Garlic • 4 rashers of smoked bacon • 1 Onion & 1 Shallot • 3 Cup Chicken Stock • 3 Cup Vegetable Stock • 4 oz of butter • 1 tbsp of grated nutmeg • Salt & Pepper • 1 Tablespoon Olive Oil • 1 Cup Chopped Leek
