Fresh Salmon, Skin-On ( 1 per person, choose a thick piece)• Olive oil • 1/4 Cup of all-purpose flour • 1/4 cup of melted unsalted butter • 1/2 lemon pressed juice • 1/2 lemon zest • Optional: chili flakes, freshly grated ginger • 1/2 cups of vegetable broth or white wine • fresh parsley • salt & pepper and freshly grated nutmeg • 3 + 3 cloves of garlic • 2 golden potatoes (or white sweet potatoes) • 2 carrots • small celeriac root (celery root) • 2 turnips • 1/2 cup of heavy cream
• 1 large saucepan • 1 oven baking dish (deep) • 1 fine-mesh strainer • 1 wood spoon • 1 non-stick frying pan • 1 peeler
