• 2 lb of Fish Bones and/or Fish Heads • 6 Cups of Fish Stock • 1 Leek • 1 Onion & 1 shallot • 2 Celery Sticks • 1 Bouquet Garni (Bunch of Fresh Thyme/Tarragon/ Herbes de Provence) & 2 Bay Leaves • 6 Cloves Garlic • 1 Fresh Fennel Bulb (Reserve fronds) • 2 Tomatoes • Olive Oil, Salt & Pepper • 1 pinch of Saffron Threads • 1 lb of White Fish (without skin) such as Cod, Monkfish, Halibut, Flounder or similar• 1 Glass of Whine Wine (or 2 tbsp of Pernod Pastis as an option)
