Pain d’épices, translated as “spice bread” in English, is a traditional French cake that is typically made with honey and a blend of warm spices such as cinnamon, ginger, nutmeg, and cloves, anise. This aromatic bread/cake has been a beloved treat in France for centuries, especially around Christmas.

2 cups of flour • 1 tsp baking soda • 1 pinch of Salt and Pepper • 1/4 tsp of ground cloves • 1/4 tsp of ground ginger • 1/4 tsp of ground nutmeg • 1 tsp of ground cinnamon • 1 cup of water • 1 cup + 1/3 cup of honey • 2 tbsp of molasses • 1 stick of cinnamon • 3 anise stars • 1/2 cup of light brown sugar • 1 orange zest • 1 lemon zest • 1/2 cup of orange jam • 1 egg • 8 tbsp of butter • 1 tsp of vanilla extract
