• 6 Large fresh scallops (or 3 per person) • 1 bunch of fresh white asparagus (White asparagus are ideal for this recipe, but thick green asparagus work beautifully too!) • 3 garlic cloves • Dried herbs (herbs of Provence or thyme/oregano/rosemary) • 2 + 5 tbsp of olive oil • 3 tbsp of butter • salt & pepper • 2 + 1 tbsp of lemon juice • 1 egg yolk • 2 teaspoon of Dijon mustard • All-purpose flour
