Perfect as a side dish or bedding for meat and fish, leftovers can be kept for a few days in the fridge to prepare healthy lunches!

- 1 Cup Sliced Carrots
- 1 Cup Diced Onions and shallots
- 1/2 Cup of Fresh Fennel Bulb
- 1 Cup Chopped Celery
- 2 Sprigs of Fresh Thyme
- 1 tbsp Dried Herbs (Herbs of Provence or Dried Oregano)
- 1 Tbsp of Dijon Mustard
- 2 Bay Leaves
- 3 Cloves Garlic
- 1/2 Cup of Red Wine
- 1 Teaspoon of Red Wine Vinegar or Worcester Sauce
- 1 tbsp Olive Oil
- Salt & Pepper
- 3 to 4 cups of Vegetable Stock
- 1 Bunch of Fresh Parsley Chopped
