It is best to let the salad refrigerate for a couple of hours for all flavors to get infused! This salad creation includes cucumber, cherry tomatoes, lemon, olive oil, dried herbs, mint, celery, scallions, mozzarella and grated parmesan.

- 1 cup of orzo
- 1 tbsp of dried herbs (eg: herbs of Provence)
- 2 cups of cold water
- 1/2 cucumber
- 1 cup of Cherry tomatoes
- 1 cup of mini mozzarella balls
- 2 celery stalks
- 2 scallions and some fresh mint leaves/or/and fresh basil leaves
- Balsamic or White wine Vinegar or Apple cider vinegar
- 2 tbsp of Dijon Mustard
- Salt, pepper, olive oil
- 1/2 lemon
- 2 tbsp of grated parmesan
