1 lb of wild mushroom mix • chestnut peeled and ready to eat (approx 15oz/420g) • 2 Shallots • Fresh Thyme • 1 pinch of Freshly Grated Nutmeg • 1 Cup of Hot Milk • 1/2 cup of Sour Cream • 2 Cups of Chicken Stock and 2 cups of Vegetable Stock • 2 tbsp of butter • Salt & Pepper • 1/2 cup of grated parmesan and 1/2 cup of grated mozzarella • 1 shot of Whiskey or Brandy (optional)
