Learn how to cook Ratatouille with Chez François!
During this class, we will cook together the classic Provençal Ratatouille, a delicious dish made of so many fresh vegetables and aromatics that will transport you to the south of France. We will first prepare the sauce together and then prepare all the vegetables for the top layer. Layered baked ratatouille is an elegant and Mediterranean way to serve this classic French casserole! Perfect hot or cold, you can serve this dish with rice, pasta or just enjoy it as a healthy snack or lunch!

For the sauce:
Bell Peppers: 3 red, 2 yellow • 4 large tomatoes • 4 Tbsp of Olive Oil • 2 Tbsp of Butter • 2 yellow or white onions and 1 shallot • 2 carrots • 2 celery stalks • 2 Sprigs of Fresh Thyme and some Basil leaves • 3 bay Leaves • 1 Chili Pepper or 1 Teaspoon of Chili Flakes • 6 cloves of garlic • 1 Tbsp of Dried Herbs (ideally Herbs of Provence or Oregano) • Salt & Pepper • 1 Tbsp of Sugar
For the top layer of the dish:
• 1 Eggplant • 2 Yellow Bell Peppers • 3 Gold Potatoes • 2 Zucchinis • 1 Whte Onion • 2 Tomatoes • 1 Yellow Squash • 4 Tbsp of Olive Oil and 1 Sprig of Thyme • Salt & Pepper • Shaved Parmesan and some Fresh Parsley and Basil Leaves for decoration.
• 1 stockpot or dutch oven • 1 hand blender • 1 large bowl • Foil • 1 wood spoon - 1 chopping board
