Tarte Tatin is the famous French dessert, an upside-down apple tart that is made of pastry baked over sliced apples caramelized with sugar. “La Tarte Tatin” was probably born at the end of the 19th century, in Sologne, France. In the hotel restaurant of the Tatin sisters, one of the sisters simply forgot to prepare the dessert and rushed by throwing caramelized apples into a dish but also forgot the dough! So, the worldwide-acclaimed French dessert was born...accidentally!
The popularity of the Tarte Tatin started when Maxim’s, the famous restaurant in Paris decided to include the dessert on their menu!

Pastry:
• 300 grams all-purpose flour (2 cups) and 50 grams for extra use • 150 grams of unsalted butter (2/3 cup) and 50 grams of vegetarian butter (margarine) at room temperature • 3 tablespoons of cold water • 3 tablespoons of caster sugar • 1/2 teaspoon of salt
Filling:
• 2 lb of apples (granny smith apples are excellent for Tarte Tatin, alternatively you can opt for Honeycrisp) • 2 lemons • 1 cup of granulated sugar • 5 tbsp of unsalted butter •1 teaspoon of vanilla essence or 1 sachet of vanilla sugar • 1 tablespoon of honey • 1 tablespoon of cinnamon powder
For serving (optional):
• vanilla ice cream
• 1 Large Bowl • 1 Fine-Mesh Strainer • 1 Tart Pan (Approx 9" Diameter) • 1 Frying Pan• 1 Rolling Pin
