LIST OF INGREDIENTS:

For the Pork Tenderloins:

  • 3 Pork Tenderloins (1 per person)
  • 1 Fresh Mozzarella Ball
  • Fresh Rosemary
  • Dijon Mustard
  • Salt and Pepper

For the Rustic Potato Mash & Zucchini Bed:

  • 1 lb of red potatoes
  • 1 zucchini
  • Fresh Thyme and Rosemary
  • Freshly grated nutmeg
  • Unsalted Butter
  • 1/3 cup of heavy cream
  • 1/3 cup of warm milk

For the Champagne Sauce:

  • 1 shallot
  • 2 tbsp of unsalted butter
  • 1/2 cup of chicken stock/broth
  • 1/2 cup of Champagne ( or equivalent sparkling wine)
  • 2 tbsp of heavy cream
  • Salt and pepper
