• Fresh Mussels (2 lb or more, approximately 1 lb per serving) • 1 fresh fennel bulb • 2 celery stalks • 1 shallot • 6 garlic cloves • 3 tbsp of butter • Salt & Pepper • Olive Oil • 1 leek • Dried Herbs • 1 lemon • 1/2 cup of dry white wine • 1/2 cup of heavy cream • 1 baguette (optional) •1 tbsp of all-purpose flour
