LIST OF INGREDIENTS:
For the Pâte à Chou (Chou Pastry):
- 1/2 cup butter (4 oz)
- 1/2 water
- 1/2 whole milk
- 1/2 tsp salt
- 1 tsp sugar
- 1 cup flour
- 4 eggs
- almond flake
For the Praline Paste:
- 1 1/2 ounces (45 ml) water
- 6 tablespoons of white granulated sugar
- 3 tablespoons of light corn syrup
- 1/3 cup of toasted blanched hazelnuts
- 1/2 cup of toasted sliced almonds
- 1/4 teaspoon Diamond Crystal kosher salt
- 1/4 teaspoon baking soda
For the Crème Patissière:
- 2 cups of milk
- 1 vanilla bean
- 1/2 cup sugar
- pinch of salt
- 4 yolks
- 1/5 cup corn starch
- 1/5 cup flour
- 1/4 butter (2 tbsp)
- ice
For the Assembly:
- 2/3 cup butter/150 g
- Almond flakes
