LIST OF INGREDIENTS:

  • 3 pears (or 1 pear per person) - recommended varieties are Bosc or Anjou
  • 3 cups of cold water
  • 1 + 1/2 cups of granulated white sugar or brown sugar
  • 2 star anise + 1 cinnamon stick
  • 1 vanilla bean
  • Lemon peel + Lemon juice
  • Powdered sugar
  • Almond flakes for decoration
  • Vanilla Ice Cream to serve on the side
  • For the Chantilly Cream:
  • 2 tbsp of granulated white sugar
  • 1/2 cup heavy cream
  • 1 tsp vanilla essence
  • For the dark chocolate sauce:
  • 8 oz bittersweet chocolate chopped (or dark)
  • 7 Tbsp unsalted butter, softened
  • 1/4 cup heavy cream
  • pinch of salt

LIST OF COOKWARE AND ACCESSORIES:

1 saucepan large enough to hold all the pears upright for poaching • Kitchen Towel  • 1 Medium Mixing Bowl • 1 Apple Corer tool • 1 Piping bag + tip for Chantilly Cream • 1 Electric hand Mixer  •  1 Small saucepan with a small bowl to lay above the saucepan (to melt the chocolate) • 1 Rubber Spatula • 1 Sieve
