During this class, we will cook together Coq au Vin, one of the most emblematic dishes in French Cuisine history and one of the most frequently served courses in French Restaurants! Coq au Vin is the classic French stew made of chicken slowly braised in red wine and vegetables, finally becoming a supremely rich sauce filled with tender meat, bacon, carrots, mushrooms, and pearl onions. According to an old legend, the Gauls decided to taunt Julius Caesar by sending him a rooster, recognized as the symbol of bravery. Caesar retaliated by having the rooster cooked in red wine, at the time, a symbol of wealth and power! Over the centuries, the French re-invented this recipe which became the pride of France!

LIST OF INGREDIENTS:
• 1 Bottle Red Wine • 2 Carrots • 1 Onion and 2 shallots • 3 lemons • 1 Celery stick • 1 Bunch Fresh Thyme • 3 Bay Leaves • 6 or more Cloves Garlic • 1 pack of white Mushrooms • 2 or more large Chicken Thighs and 2 or more large Chicken Legs • Olive Oil • 1 tbsp of Butter • Salt & Pepper • 1/2 Cup all-purpose flour • Pack of thick cuts of bacon (minimum 6 to 8 cuts) Smoked or unsmoked (or alternative vegan option) • 1 bag of Pearl Onions (optional but recommended)• Chicken Stock (2 cubes or liquid) & 1 Cup Vegetable Stock (2 cubes or liquid) • 1 Bunch Fresh Parsley • 1 Shot of Brandy or whiskey (optional but recommended)
Tips:
1. Your dish is all about great quality chicken!.. so you should purchase large pieces of chicken, they will cook for a while in the sauce so they need to be very big and meaty!
2. You do not need to purchase an expensive red wine as the wine will only be used for marinating and cooking. Though I would recommend to keep it French!
