Boneless Lamb leg or shoulder (2 lb) • 1 yellow squash and 1 zucchini • 2 carrots • 1 pack of couscous grain original • dried raisins, dried apricots and/or dried dates • Green pitted olives • 1 can of garbanzo beans • sliced almonds or almond flakes • 1 shallot • 6 garlic cloves • Moroccan spices (Ras el Hanout, harissa spice blend, chill flakes) • salt & pepper • Fresh ginger • Fresh or ground nutmeg • olive oil and butter • honey • harissa paste • Fresh cilantro or Fresh mint leaves • chicken or vegetable stock • 1 cinnamon stick (optional) •

“I have taken three classes with Chef Francois and each one has been amazing but my favorite by far is the lamb tagine. My sister and I went to Morocco last year. We ate delicious food made in tagines the whole week. Shortly after being home, I saw an advertisement for Chef Francois having a lamb tagine class. Unfortunately, I was not able to connect on that class, but Chef François rescheduled another tagine class just for me and my sister when she was in town for us to do together. It was very special and the food was out of this world. I have to say it was even better than the lamb we had in Morocco. I’ve also done a crème brûlée, olive bread and cheese soufflé class. Each class has technical portions which he waits and makes sure that each person in the class is up to speed and at the right consistency before moving on. If you take Chef François’ classes, you will have amazing food guaranteed. I highly recommend taking one of his classes. I’ve already signed up for two more classes and cannot wait.“
