I call it my decadent Mediterranean Burger because it includes roasted red bell peppers, toasted eggplant, breadcrumbs, mozzarella, fresh herbs, garlic, scallions, capers, anchovies (optional) and a nice spread of my homemade pesto (that we will prepare together). A vegetarian delight or delightful appetizer for everyone!
