In this class, we’ll embark on a culinary journey to create a delightful dish that combines the rich flavors of crispy-skin salmon with the wholesome goodness of a healthy mash made from root vegetables. The salmon will be pan-fried to perfection, ensuring that the skin is crispy and the flesh is tender and juicy. To complement this, we’ll prepare a vibrant mash using a variety of root vegetables, including turnips, carrots, celeriac root, and golden potatoes.
Get ready to embark on a culinary adventure as we whip up the iconic French Celery Root Remoulade in class! This dish is a true chameleon, transforming from a delightful salad to a mouthwatering topping for burgers and sandwiches. Prepare to be amazed by this invigorating recipe, featuring grated raw celery root, creamy mayonnaise, a sprinkle of parmesan, and a burst of flavorful seasoning!
During this class, we will cook together my Gratin de Chou-fleur (Cauliflower Gratin)! This gratin is light and flavorful with only a few ingredients: cauliflower, parsley cream, milk, flour, nutmeg, and strong grated cheese such as Gruyere and parmesan. We recommend purchasing the cheese and grate it yourself for more flavor. We should eat so much more cauliflower!
US Eastern Time. During this class, we will cook together RATATOUILLE! Ideal for vegetarians, this healthy classic dish from Nice in France, is packed with fresh produce: tomatoes, bell pepper, eggplant, zucchini, yellow squash. Healthy and delicious, the perfect combination!

With frangipane and my favorite glaze for an attractive caramelized sheen, this delicious pie will be perfect as a soul-warming fall dessert on your table.
